There's nothing more comforting on a lazy summer morning than a nice, fluffy stack of pancakes. Think you need eggs to make them? Think again!

These thick and fluffy pancakes are not only vegan, but also super delicious and easy to make. The ingredients are simple & made up of items you probably already have in your kitchen- it can't get any better than that!

Without further ado, let's get into the recipe!

INGREDIENTS (makes 3 generously sized pancakes):
*This recipe can be easily doubled or tripled!

  • 1/4 cup whole wheat flour 
  • 1/4 cup unbleached all-purpose flour 
  • 1/2 tablespoon baking powder 
  • 2 teaspoons cinnamon 
  • 1/8 teaspoon salt 
  • 1/2 tablespoon pure maple syrup 
  • 1/4-1/2 cup plant-based milk or water (start at 1/4 and keep adding in until the batter reaches a thick, pudding-like consistency) 

  • Whisk together the dry ingredients in a bowl.
  • Add in the liquid ingredients. Mix until well-combined.
  • Put your pan/skillet on medium high heat. Melt a small amount of plant-based butter in the pan.
  • Pour pancake-sized amount of batter (about 1/4 cup) onto pan and cook until firm enough to flip. Then, flip over and cook for another 2-4 minutes until color reaches a nice golden brown. 
  • Serve with your favorite toppings and enjoy!! 


There you have it! As far as toppings go, maple syrup, plant-based butter, jam, fruit, vegan chocolate chips, coconut shreds, and essentially anything else will work great!
